I have decided to attempt to make a James Hoffman approved Tiramisu this weekend. I have bought sponge fingers, mascarpone cheese and a fresh bag of coffee beans, let’s go
It’s tiramisu time! I’ve pasteurised my egg yolks and made more shots of espresso back to back than I’ve ever done before, now to let it all cool down for a bit…
Mr Hoffmann suggests decaf but I don’t have any of that, just my regular beans (a fruity Rwandan blend this month). So, by the recipe, there will be a double shot of espresso in each portion.

I don’t have a little dropper / pipette bottle so I’m just going to make the saline solution in a bowl and add the requisite drops with my finger #lowtech
Welp, I’m not sure that’s entirely worked, I seemed to have too much coffee liquid despite what the recipe said. Maybe because I’m using sponge fingers instead of Savoiardi (which I couldn’t find). I guess we’ll find out in 8+hrs
Tiramisu Success! Tastes great, holds its structure really well, nice blend of coffee and everything else, I needn’t have worried

@SonnyBonds I recommend trying it, it’s not that hard once you have the ingredients
