Pierre-Yves ComtoisPour ensoleiller les jours de pluie, quoi de mieux que les galettes de sarrasin. Le sarrasin n’est pas une céréale, c’est une polygonacée de la famille de la rhubarbe et de l’oseille. La plante prospère dans les sols pauvres et secs. Ces grains triangulaires très foncés lui ont valu le nom de « blé noir ». Le sarrasin est riche en fibre et ne contient pas de gluten. Ces protéines sont complètes, c’est-à-dire qu’elles contiennent les neuf acides aminés essentiels. Le sarrasin contient plusieurs micronutriments (cuivre, fer, manganèse, vitamine B) et il aurait un effet positif sur le développement du microbiome intestinal.INGRÉDIENTS<ul><li>2 tasses de farine de sarrasin</li><li>3 tasses d’eau</li><li>½ c. à thé de sel</li><li>½ c. à thé de bicarbonate de soude</li></ul>PRÉPARATION <ol><li>Mélanger les ingrédients avec une cuillère de bois en incorporant l’eau peu à peu, jusqu’à l’obtention d’une pâte très lisse et liquide.</li><li>Pour une pâte plus légère, la laisser reposer au frais pendant 1 à 2 heures.</li><li>Verser une louche de pâte dans une poêle bien chaude et attendre que la galette se colore pour la retourner, à l’aide d’une spatule. La laisser cuire encore environ 1 minute. (Personnellement, j’utilise une poêle en fonte et je fais cuire mes galettes à sec, sans aucun corps gras. Si la poêle est assez chaude, la galette ne colle pas.)</li></ol>La galette de sarrasin est polyvalente. On la sert traditionnellement avec du beurre, de la mélasse, de la cassonade ou du sirop d’érable. Mais elle est aussi délicieuse en mode salé avec du jambon, du fromage ou du saumon fumé.
