Chris RuppelWINTER BASIL SMASH handful fresh basil 1 oz lemon juice ¾ oz simple syrup 2 oz aquavit Garnish: basil leaf Method: Set aside one basil leaf as garnish. In a shaker, muddle remaining basil leaves with lemon juice and simple syrup. Add aquavit and ice cubes, shake, and double strain into a rocks glass with fresh ice cubes. An interesting riff on the Gin Basil Smash, it's refreshing yet has a touch of warming notes from the aquavit. Don't be scared off by the two full shots. This one is balanced nicely by the generous amounts of lemon and simple. I had Thai basil on hand when I took the photo and I thought it worked well in the cocktail, even though the spec calls for the Italian variety. Combine the remaining ingredients in a stirring glass with ice and stir. Strain into the glass, express lemon peel, and use as garnish. Another boozy stir for a cold winter night. This version of the legendary cocktail comes from the book Cure: New Orleans drinks and how to mix 'em, page 29. I finally found an affordable bottle of Sazerac in Germany and thought the titular cocktail was the logical test pilot. For the photo I also tested a new lighting setup.
